The establishment of the Thurn and Taxis post office in 1653 is linked to the beginning of beer production, initially for the brewery's own consumption. It was only under Georg Bechert (from 1848) and later Carl Steinbach (from 1861) that a strong upswing in the brewery business began. In the inflationary year of 1923, the brewing contingent was sold to Brauhaus Nürnberg AG, and the company concentrated solely on the
Malt production. By 1965, all malt barns had been replaced by germination boxes with automatic reversing gears. Today, Carl Steinbach's great-grandson, Jörg Gewalt, is responsible for malt production at the Zirndorf facility. His brother Christoph Gewalt continued the interrupted brewing tradition in 1995 and commissioned a small specialty brewhouse.
