Founded by Georg Ernst Vierzigmann, the company produced primarily for the needs of the local community until around 1870. A decades-long rise began with its takeover by Georg Erlwein in 1876. After director Leonhard Wilhelm Schultheiss joined the company as a partner in 1895, the First World War and its aftermath led to the company's takeover by Hofbräu AG Bamberg in 1919. With the Nazi seizure of power, the once again highly successful company, owned by major Jewish shareholder Ignatz Nacher, was "Aryanized" in 1934.
After a major fire at the end of 1936, only a beer depot and the ice cream factory survived. From then on, beer was produced at the Bamberg brewery. In 1954, the ruins near the hospital were sold to the Friedrich-Alexander University. The Hofbräu AG depot was therefore relocated to Hofmannstraße 116, later to the southern edge of Tennenlohe. The Hofbräu was fully absorbed into Patrizier-Bräu Nürnberg by 1977.
