Carp in Erlangen

It's considered a culinary specialty in the Erlangen-Höchstadt district! The Aischgrund carp. Around Erlangen, there are still many carp ponds where carp grow.

The traditional “Aischgründer carp" has a tradition in the region that is over 1200 years old. Church institutions such as the Archdiocese of Bamberg have also contributed to the successful growth of carp farming. Even today, the pond culture industry is committed to preserving this cultural landscape. Since 2012, the Aischgrund carp has even been a EU protected indication of origin (PGI).

Erlangen is considered part of this cultural landscape. In the districts Kosbach, Häusling, Steudach and Dechsendorf There are numerous ponds. Dechsendorfer Pond – also known as the Great Bishop's Pond – in the northwest of the city is the largest pond in the Aischgrund region. Unique biotopes have been preserved here. The ponds, some of which are arranged in chains, are refuges for rare species and home to a unique flora and fauna. Carp favor these standing bodies of water.

A golden rule in Erlangen and the surrounding area is: Carp may only be tasted in months with an "R" in its name. These are the months September to AprilIt's available crispy baked or as "blue carp," as pepper carp, whole, or as a fillet. There are no limits to the creativity of local restaurants.

In the region, carp isn't just a Christmas favorite. Many Franconian restaurants in Erlangen and the surrounding area feature carp as a popular seasonal dish on their menus. Aischgrund mirror carp is considered a delicacy by connoisseurs from near and far.
