The start is Santiago Estrada Lozano with Ajoblanco, an Andalusian cold soup made with almonds, garlic, olive oil, water, and shrimp medallions. This is followed by calf's head carpaccio and sweetbreads with anchovy and bell pepper vinaigrette, prepared by Dominic Polster from the Polster Inn. The next course – savoy cabbage and mushroom cannelloni with onion jus – was composed by Zacharias Dengler from nutmeg, followed by lightly smoked catfish, Jerusalem artichoke with quince beurre blanc from Fritz Striegel, Alter Brunnen and host of this year's gala evening, is preparing the fifth course. It is under a special star – that of the Michelin-starred chef Maximilian StockHe will prepare T-bone steak for you from his own farm, along with bone marrow, potatoes with mustard and watercress. As a grand finale, he will pamper you with... Mauro Sindaco from the heart of the matter with with goat's milk thyme panna cotta with honeycomb, walnut crumble and blood orange.
The 6-course menu is accompanied by wines from renowned winemakers.
