Gala evening “Cooking with friends”: the highlight with star chef Maximilian Stock

Because this time our celebrity chef Maximilian Stock Literally, he'll bring the stars down from the sky and onto your plate. Because under his leadership, the gourmet dining rooms of the renowned restaurant were renovated in 2025. Zillertal Alpine Hotels in Hintertux with a Michelin-Stern Excellent. Furthermore, the successful chef was awarded 3 toques by Gault & Millau and 95 points from Falstaff We are delighted. We are very proud that he is coming all the way from the Alpenhotel in the Zillertal to Erlangen especially for the gala evening and will contribute his expertise to the gala menu. 

The star chef from the proven team Erlangen's top chefsDominic Polster, Fritz Striegel, and Zacharias Dengler. Together with Santiago Estrada Lozano from Santiago's Kitchen and Mauro Sindaco from Restaurant Herzstück. This is more than a dinner – it's a feast for the senses!

The start is Santiago Estrada Lozano with Ajoblanco, an Andalusian cold soup made with almonds, garlic, olive oil, water, and shrimp medallions. This is followed by calf's head carpaccio and sweetbreads with anchovy and bell pepper vinaigrette, prepared by Dominic Polster from the Polster Inn. The next course – savoy cabbage and mushroom cannelloni with onion jus – was composed by Zacharias Dengler from nutmeg, followed by lightly smoked catfish, Jerusalem artichoke with quince beurre blanc from Fritz Striegel, Alter Brunnen and host of this year's gala evening, is preparing the fifth course. It is under a special star – that of the Michelin-starred chef Maximilian StockHe will prepare T-bone steak for you from his own farm, along with bone marrow, potatoes with mustard and watercress. As a grand finale, he will pamper you with... Mauro Sindaco from the heart of the matter with  with goat's milk thyme panna cotta with honeycomb, walnut crumble and blood orange.

The 6-course menu is accompanied by wines from renowned winemakers.

Maximilian Stock was born and raised in the Tux Valley. After gaining considerable national and international experience, he skillfully and expertly led the kitchen team at the renowned Alpenhof in the Zillertal Valley to culinary excellence, earning numerous awards, including the Michelin Star Guide 2025We are delighted and proud that he is helping to create the gala menu together with our star chefs from Erlangen and is contributing his expertise.
